Course One
The First Course that is prepared for Christmas Eve Dinner is actually
the easiest of all the entrees you will be preparing for the evening.
JUMBO SHRIMP COCKTAIL
2lbs Fresh Jumbo Shrimp
12 Tablespoons of Shaved Ice
4 Leaves of Lettuce
Cocktail Sauce
First clean Shrimp in cold water, Once shrimp are cleaned let them drain in a strainer. Take
your lettuce leaves and bed the cup where the shrimp will be placed. Position the Shrimp on the lip of the serving dish
so the tails are hanging on the outside. Place cocktail sauce in the middle of the shrimp. Place the shaved Ice
in a dish larger than the one holding the shrimp. Finally place the shrimp dish in side of the bowl with the shaved
ice.

1 lb of Angel Hair Pasta
1/2 Cup of Olive Oil
2 Cloves Garlic Sliced thin
1 Tin Anchovies
Capers if desired
Water from Pasta
Sautee on Stove the oil and garlic, once the garlic starts to brown, Place the Pasta into the
Boiling Water. Once pasta is cooked pull it saving approximately half of the boiling water. Place strained
pasta, anchioves and half of boiling water into Pan with the oil and garlic. Mix on the stove for approximately 3 to
4 minutes. Pull pasta and place in serving dish layering some of the uncooked anchioves on top of dish. If desired when
mixing pasta with oil on stove throw in some capers.
**Chef Vincent Hint**
What complements this dish nicely are mussels marinated in a rich butter and oil sauce.
Myself and Chef Darren have even dared to mix a little mussles marinara in the batch as well.. The angel hair with the
o`lio and the mussels are a pleasant and light treat for this particular course of the meal.
